Gingerbread Cookies

It’s the most wonderful time of the year….!

Hi All!

Apologies for my absence from the quiet baker blog… life got a wee bit busy as it usually does, but I am in full Christmas baking mode now! Cannot believe this year is almost over.. it has been quite the year, perhaps one of the most memorable and one for the books for sure…. did some traveling, learned some new things, saw a bunch of neat things, and best of all… tried a ton of amazing foods. I love Christmas and all of it’s cheery and glitzy glory, but I must admit that figuring out gifts is a stressor for me. What to buy, when to buy it, when to see everyone… and the list goes on!… I really shouldn’t be making a fuss at all… definitely not a real problem. #firstworldproblems

I’ve tried to start holiday baking a little earlier this year… mmhmm, planning ahead! Throughout the year, my holiday Pinterest board fills up with amazing recipes which I fully intend on making for the holidays… until I realize that there is never ever enough time to make everything. So, this year, the freezer and I are good friends… it is currently housing a full shelf of cookie dough just waiting to be rolled, shaped, and baked into delicious creations that will be consumed along with many other delicious foods this holiday season. Cannot wait.

The cookie line up for this Christmas includes: the classic rolled sugar cookie, cranberry orange shortbread cookies, whipped shortbread cookies, and the must-have gingerbread cookies. There are so many other recipes that I’d like to make for the holidays… hoping to somehow pull it altogether and make everything, but we will see…. it’ll be a race against the clock as it usually is.

I love the classic gingerbread cookie, and for good reason too!… these guys make their yearly appearance and fill the house with an amazing aroma of warm spicy buttery goodness … to die for. Seriously, so good. My go-to recipe is still Eileen’s Spicy Gingerbread Cookies (check it out here). I have to be honest though… this is actually the first and only gingerbread recipe that I have ever tried. I’ve wanted to try other gingerbread cookie recipes because I’m sure they are also quite tasty, but I’m always worried that they just won’t be as good as these because these are top notch awesome! I guess we will see… maybe next year… =P
