Nutella Granola

I’ve changed up my breakfast routine a little – currently really loving overnight oats topped with granola.

I was recently introduced to this awesome fast and easy breakfast dish not long ago, and have not looked back. I actually prefer them over regular hot oatmeal – much creamier, fluffier, healthy, hearty, and just so easy. (Plus the options are endless!) Overnight oats are not bad on their own, but I find that they are 10 times better when topped with crunchy granola – I like them little morsels of crunchy goodness sprinkled throughout.

I was feeling like something chocolatey, yet healthy at the same time, then I found this recipe for Banana Nutella Granola. It looked and sounded amazing and did not disappoint because it totally was. Tasted so decadent yet somewhat healthy at the same time – could not put this stuff down. C seemed to like them too.

Nutella Granola

  • Servings: 15
  • Difficulty: easy

  • 3 C old-fashioned rolled oats, not quick-cooking
  • 3/4 C puffed wheat cereal (Red wheat)
  • 1/2 C ground flax seed
  • 1/4 C almonds, chopped
  • 1/3 C pumpkin seeds
  • 1/2 tsp ground cinnamon
  • 1/3 C Nutella
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/4 C semi-sweet chocolate chips (optional)

Directions:

  1. Preheat oven to 325 degrees F. Line baking sheet with silicone baking mat (or parchment)
  2. In a large bowl, mix together dry ingredients – oats, puffed wheat, flax, almonds, pumpkin seeds , and cinnamon then set aside.
  3. In a small pan over medium-low heat, melt together Nutella, honey, and vanilla. Once ingredients are all completely melted together, remove from heat and pour over dry ingredients. Quickly stir everything together until all dry ingredients are moistened. (Work fast because the nutella mixture will begin to harden)
  4. Spread oat mixture over prepared baking sheet in a thin even layer. Bake for 10 minutes, remove from the oven and stir. Repeat baking and stirring another two times (baked for total of 30 minutes). Keep a close eye on the granola – I found that with the nutella and honey mixture, it tends to darken more quickly.
  5. Top the granola with chocolate chips and gently stir
  6. Allow granola to cool completely on the baking sheet then transfer to an airtight container

As for my overnight oats, what I usually do is mix together equal parts old-fashioned oats with soymilk (1/2 C each), top with anything else you’d like (hemp hearts, chia seeds, dried cranberries, cinnamon etc.), pop it in the fridge overnight and sprinkle with granola the next morning (or just eat it as is). You could heat the oats up when you’re ready to eat them, but I preferred mine a little chilled, so I just microwave them for about 15 seconds.

Told you it was easy! Plus its a completely portable breakfast – just grab and go right out of the fridge and eat it at work! Enjoy!

    Hi Janine! Thanks for bringing this delicious breakfast treat to Fiesta Friday. I love your idea of sweetening up the granola a little (though not too much it looks like) and adding them on top of your overnight oats. I still have not tried overnight oats, but have been curious since seeing them on many blogs. The addition of granola must give it a lovely crunch. I wonder if I can add something to bind the granola you have in the recipe and create nutella granola bars?! That sounds like my optimal grab and go breakfast!

      Hi Ngan, no problem, hope everyone liked it! I’ve actually made Nutella granola bars before – just added some honey to bind the nutella, oats, almonds, and cranberries. Pop it in the freezer and bam, they taste like chocolate bars but are perfect ‘granola bars’. Hope you give it a try!
