Donut…. muffins!

Have you ever heard of donut muffins? I’ve seen recipes for donut muffins before but thought they just sounded odd and was never curious enough to actually try to make them… until I saw them featured on the food network. Forgot what show it was, but they looked so good… cinnamon and sugar goodness.

Had a craving for something simple, quick, and, sweet. Donut muffin recipe popped up on allrecipes.com so concluded that it was meant to be.

The recipe says it makes 24 mini muffins, but only managed to make 20.

Ingredients

  • 1/2 cup white sugar
  • 1/4 cup margarine, melted
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1/4 cup margarine, melted
  • 1/2 cup white sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini-muffin cups.
  2. Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
  3. Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
  4. While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture. Let cool and serve.

The only thing I substituted in this recipe was the 1/2 C of sugar for splenda, but other than that, followed the recipe exactly. They looked pale at 15 minutes, so baked them for another couple of minutes until I saw some color. I was actually afraid that I had over-baked them because the bottoms were very golden compared to the tops and they felt kind of hard when I took them out of the muffin tin. But they actually turned out awesome and I found that I liked the crunchy shell that was formed from baking them a little longer. Crunchy, cinnamon, and sugary on the outside and cakey- soft on the inside.


I really like this cake-like donut… reminds me of those iconic mini cinnamon sugar donuts that you can buy at the PNE… so good…. fresh, bite-sized, so soft, and full of cinnamon & sugar… yum. This recipe is definitely a keeper… maybe a future potluck dessert…
