A St. Patty’s Day birthday

Tomorrow is St. Patrick’s day, a day to celebrate the irish. It also so happens to be my brother’s 18th birthday. He usually doesn’t request to have a birthday cake, but this year, he requested an ice cream cake. The weather isn’t exactly warm right now, so naturally, I was a little taken back by the thought of making a frozen dessert (I’m always cold)… whatever makes the birthday boy happy right?

I’ve never made an ice cream cake before… always wanted to try, but never seemed like there was a right time. I decided to go with a popular recipe that I found off allrecipes.com… it’s called “Hot Fudge Ice Cream Bar Dessert”, which can be found here.

I made the cake this afternoon, to have it ready by tomorrow, so I will have to post pictures another time. Though I haven’t tried the cake itself yet, I must say that the peanut butter chocolate sauce is AMAZING!… I honestly don’t say that often, but the sauce is truly delicious… even though it is only 2 ingredients mixed together… peanut butter + chocolate sauce = match made in heaven, seriously.

Happy St. Patrick’s Day everyone! So we ended up trying the ice cream cake today, and it actually turned out really sweet, but so good!.. It must have been the awesome chocolate peanut sauce that was overly sweet… must tweak that for next time… Needed a glass of milk to wash down all the chocolate-peanuty goodness… but with that being said, it was still pretty good.. My mom compared it to a turtle cake? No idea…

So here is a before shot of the cake… looks like  fudgy brownies… decided to use this square pan because I was too lazy to cut all the rectangular ice cream sandwiches to fit my round spring-form pan =]

See the many layers of sweet goodness? So we have chocolate sandwiches lining the bottom, topped with that awesome chocolate-peanut sauce, a layer of whipped cream, and a sprinkle of chopped peanuts… then all of that repeated again for a total of 2 layers of sweet goodness =D

 The picture quality isn’t as good on these last 2 images because I had to use a camera phone… camera battery died after the first few shots.
